Today, we’re making a Homemade Doner Kebab that is perfect for parties, family gatherings, and a guaranteed hit with the kids! Forget delivery—this fresh, juicy, and flavor-packed meal will be the star of your table. 🥂✨
📔 Ingredients
For the Pita Bread (Makes 7 portions):
Warm Water — 130 ml
Warm Milk — 130 ml
Dry Yeast — 7 g
All-purpose Flour — 530 g
Salt — 5 g
Olive Oil — 10 ml
Yogurt — 110 g
For the Juicy Kebab Meat:
Ground Beef — 700 g
Onions — 2 pcs
Fresh Coriander (Cilantro) — 1 bunch
Oregano — 1 tbsp
Yogurt — 2 tbsp
Olive Oil — 1 tbsp
Salt & Black Pepper — to taste
For the Filling & Secret Sauce:
Onion — 1 pc (marinated with 1 tbsp apple cider vinegar, 1 tbsp sugar, and 1 tbsp olive oil)
Bell Pepper (Paprika) — 1 pc
Tomatoes — 2 pcs
Napa Cabbage — 100 g
Fresh Parsley — ½ bunch
Pickles — 2 pcs (finely diced)
Sauce Base: 3 tbsp yogurt, 3 tbsp ketchup, 1 tbsp mustard, 3 cloves of garlic (minced).
👨🍳 Step-by-Step Instructions
1. The Perfect Pita Base
Mix the warm water, warm milk, and dry yeast. Let it sit for 15 minutes until the yeast becomes active and foamy. Add the flour, salt, olive oil, and yogurt. Knead the dough thoroughly, cover with a towel, and leave in a warm place for 1 hour. Once risen, divide into 7 portions, roll them out evenly, and bake at 180°C (356°F) for 15 minutes.
2. The Signature Kebab Meat
Blend 2 onions and the coriander in a blender until smooth. Mix this aromatic paste into the ground beef. Add salt, pepper, oregano, yogurt, and olive oil. Spread the meat in a thin, even layer on parchment paper. Fold it into multiple layers (as shown in the video). Bake in a preheated oven at 180°C (356°F) for 25 minutes.
3. Fresh Fillings & Sauce
Marinated Onions: Slice 1 onion into half-rings, mix with vinegar, sugar, and oil. Let it sit.
Veggie Prep: Slice the bell pepper, tomatoes, and Napa cabbage. Chop the parsley.
The Sauce: Combine the diced pickles with yogurt, ketchup, mustard, and minced garlic. Stir until creamy.
4. Assembly
Slice the baked meat thinly. Open your fresh pita and layer the ingredients as shown in the video!
