Learn how to cook bharleli Vangi in authentic Maharashtrian Style.
INGREDIENTS :
6 TO 7 BRINJAL
-----------grinder -------------
1 BUNDLE OF GARLIC
1 inch ginger
3 tsp coriander seeds
2 tsp cumin
1 tsp black cumin
2 inch cinnamon
6 black paper corns
4 cloves
fresh coriander or cilantro
SMALL BOWL OF PEANUT POWDER
2 TSP GHATI MASALA/indian spicy red chilli powder
----------------grinder --------------
CHOPPED CORIANDER LEAVES
CRUSHED GARLIC
1 TSP OF TURMERIC POWDER
PINCH OF ASAFOETIDA
SALT TO TASTE
OIL AS REQUIRED
METHOD :
APPLY OIL ON BRINJALS
CUT OFF THE TIP & SLIT THE BRINJALS
PLACE IT IN WATER
APPLY SALT INSIDE THE BRINJAL
put all MARKED ingredients in grinder and grind it coarsely
STUFF THE PREPARED MIXTURE EQUALLY IN EACH BRINJAL
STUFF ALL THE BRINJALS
HEAT OIL IN PAN
ADD PINCH OF ASSAFOETIDA
ADD CRUSHED GARLIC & TURMERIC POWDER
SAUTE ON LOW FLAME
PLACE BRINJALS IN PAN
TOSS IT PROPERLY
ROAST FOR 5 MINS
ADD LITTLE WATER
ADD CHOPPED CORIANDER LEAVES
COVER IT COOK IT FOR 5 TO 7 MINS
BHARLELI VANGI IS READY TO SERVE
