Recipe: White Chocolate Cranberry Pecan Clusters
Ingredients:
1 bag (12 oz) premium white chocolate chips (or white almond bark/melting wafers)
1 ½ cups dried cranberries (like Craisins)
1 ½ cups pecans, roughly chopped (toasted preferred)
1 teaspoon coconut oil or vegetable shortening (optional, helps the chocolate melt smoothly)
Pinch of sea salt (optional, for a sweet & salty flavor)
Instructions:
Prep: Line a large baking sheet with parchment paper or wax paper.
Melt Chocolate: Place the white chocolate chips (and coconut oil, if using) in a large microwave-safe bowl. Microwave in 30-second intervals, stirring vigorously in between, until the chocolate is completely melted and smooth. Be careful not to overheat as white chocolate can seize.
Mix: Immediately pour the 1 ½ cups of dried cranberries and 1 ½ cups of pecans into the melted chocolate. Stir well until every nut and fruit piece is thoroughly coated in the white chocolate.
Scoop: Drop spoonfuls of the mixture onto the prepared parchment paper to form clusters. Alternatively, spread the mixture out into one large layer to break into a "bark" later.
Set: Allow the clusters to sit at room temperature until the chocolate hardens completely (about 30–60 minutes). To speed this up, place the baking sheet in the refrigerator for 15-20 minutes.
Serve: Once set, peel them off the paper. Serve a generous slice of bark or a few clusters immediately or store in an airtight container.
