This Fish-Pie-Tato is the ultimate comfort food mash-up. A fluffy jacket potato stuffed with a creamy fish pie filling, topped with cheesy mash and grilled until golden and bubbling.
We made a classic white sauce, loaded it with fish, prawns, peas and parsley (and yes… a sneaky spoon of capers), then mixed the scooped-out potato with butter, seasoning and smoked salmon before piling it all back into the crispy skins and finishing with vintage cheddar.
Ingredients (serves 2)
2 large baking potatoes
25g butter
20g plain flour
1/2 pint milk
2 frozen white fish fillets
150g cooked prawns
75g frozen peas
1 teaspoon capers (optional)
Large handful fresh parsley, chopped no stalks
50g smoked salmon
20g or more butter for the potato mash
Salt, to taste
Black pepper, to taste
100g vintage cheddar cheese, grated
