Perfect! Pumpkin is called "farsi" in Nepali, and it’s commonly used in dishes like Farsi ko Tarkari or Farsi Aloo Tarkari (pumpkin potato curry). Here's a classic Nepali-style pumpkin curry recipe:
Farsi ko Tarkari (Nepali Pumpkin Curry)
Ingredients:
1/2 kg pumpkin (peeled and cubed)
5-6 medium potato (optional, cubed)
2 tbsp mustard oil (or any cooking oil)
½ tsp fenugreek seeds (methi)
½ tsp turmeric powder
1 tsp cumin and coriander powder
1 tsp red chili powder (if needed)
1 tsp Ginger Garlic paste
1 small onion (finely chopped, optional)
Salt to taste
Fresh coriander for garnish
Instructions:
Heat oil in a pan. Add fenugreek seeds and let them turn dark (but not burnt).
Add onion (if using). Sauté until golden and fragrant.
Add pumpkin (and potato, if using).
Add , turmeric powder, salt and cumin corriander powder and a splash of water.
Cover and cook on medium heat until pumpkin is soft (10–15 mins).
Smash a few pumpkin pieces with the back of the spoon or potato smasher to make the curry thick and creamy.
Add sichuan pepper and mix spices
Garnish with fresh coriander leaves.
