Stocking our pantry with home canning

This gardening and preserving season has been a busy one for us, and with that the garden has been neglected and we aren't getting quite as much preserving done as we usually do. This weekend I got to a couple small projects to stock our homestead pantry with some of our favourite home canned pizza sauce, as well as some plum sauce. This year we are utilizing the freezer for much of our food preservation to save time, so I did up another batch of green beans. They're quicker to process this way instead of pressure canning and will give us a variety to pull from for winter eating.
Pizza Sauce Recipe:
22 lbs tomatoes
3 c onions
6 cloves garlic
1/4 c olive oil
2 tbsp + 1 tsp dried basil
1 tbsp dried oregano
1 tbsp dried thyme
1/2 tbsp black pepper
1/4 c brown sugar
2 tbsp salt
1 tbsp chili flakes
2 tsp garlic powder
1/2 tbsp bottled lemon juice per half pint
Sautee onions and garlic in olive oil. Peel tomatoes and add to pot with seasonings, this batch I left the skins on. Simmer for at least 30 minutes then blend until smooth. Cook down until desired thickness, usually 2+ hours. Add lemon juice to jars and fill to 1/2 inch headspace. Process half pints and pints 35 minutes, adjusting as needed based on elevation.
