MIXED SEED & APRICOT FLAPJACKS
INGRIEDENTS
100g coconut oil
100g soft brown sugar
2tbsp golden syrup
1 tsp Madagascan vanilla extract
100g dried apricots, chopped
100g dried blueberries
3 x 100g packs seed mix
150g rolled oats
METHOD
1. Preheat the oven to 180oC, 160oC fan, gas 6. Grease and line the base of a 28 x 14 cm rectangular baking tray. Melt the oil in a saucepan with the sugar, syrup and vanilla extract. Stir well and allow the sugar to dissolve and come to a gentle simmer. Remove from the heat.
2. Throw the apricots into a food processor and blitz for a few seconds until they are finely chopped. Add the blueberries and blitz again for a few seconds. Add the seed mixes and blitz again for a few moments. (Don’t worry if the seeds don’t chop up much).
3. Spoon the seeds and fruit into the saucepan, add the oats and stir well. Spoon into the prepared baking tin. Using the back of a spoon pack the mixture into the tin and level the surface. Cook for 30 minutes, until golden. Remove from the oven. Leave to cool for 15 minutes and then lift the tray bake onto the work surface and cut into 20 bars. Cool completely on a wire rack.
You can store these bars for up to 4 days in an airtight container.
