Msemen is a fairly flaky, crispy , a flat, square-shaped Moroccan pancake (Rghaif) or flatbread that's made from a combination of plain wheat flour and semolina. Usually served for breakfast or tea time. They're made by flattening rghaif dough on an oiled surface until paper thin, dotting it with butter and semolina, then folding it into thirds (twice) to shape a layered pancake.
