easy to follow jambalaya recipe - 1st time to cook prawns and sausage jambalaya -one pot recipe

hey friends, this is my first time cooking jambalaya. one pot recipes are always great for week night dinner. easy to make and healthy, feel free to give this a try.
This recipe calls for chicken, shrimp (prawns) and sausage but I missed the chicken haha.
Here's the full recipe:
prep time - 10 mins
cook time - 40-45 mins
serves 4 but tbh it could be 6 servings.
2 tbsp vegetable oil
2 onions chopped
1 green pepper
2 celery sticks chopped roughly
2 tsp paprika
300 g skinless boneless chicken *
100 g kabanos sausage *
3 tomatoes (peeled and chopped)*
450 ml g long grain rice
850 ml hot chicken broth
1 tsp dried oregano
2 bay leaves
12 large prawns (peeled and deveined)
4 spring onions
2 tbsp chopped fresh parsley
salt and pepper
chopped fresh herbs to garnish
*chicken - missed this ingredient
*sausage - used a pack of beef sausage instead
*tomatoes - used a canned of diced tomatoes, excluded the sauce.
1.) -heat the vegetable oil in the pan over low heat.
-add onions, pepper, celery and garlic, cook vegetables for
8-10 minutes, add the paprika cook
further for 30 secs
2.) add the chicken* and sausages and cook for 8-10 minutes until lightly browned
3.) add the tomatoes* amd cook for 2-3 minutes and cook until they have collapsed
4.) add the rice to the pan and stir well. pour in the hot stock,
add oregano and bay leaves and stir well. cover and simmer for 10 minutes
5.) add the prawns and stir. cover again and
cook further for 6-8 mins. stir in the spring onions and parsley
add salt and pepper to taste

7.) add fresh herbs (book did not specify, according to your preference I guess?)

6:11 - 6:24 cook further until rice is fully cooked.
6:27 - 8:16 taste test and outro
