Ingredients for Roasted Tomato & Eggplant Stew
5 eggplants
4 medium tomatoes
3 cloves of garlic
1 tablespoon tomato paste
2 tablespoons dried basil
1 tablespoon kashk (fermented whey)
Chicken breast and thigh
Salt, black pepper, turmeric — to taste
Instructions:
Roast the eggplants and tomatoes until charred and soft.
Cook the chopped chicken separately until tender.
Sauté the garlic in oil, then add the cooked chicken.
Mash the roasted eggplants and tomatoes, then add them to the pan.
Add tomato paste, basil, kashk, and seasonings.
Stir everything together and cook over low heat for about 30 minutes until the flavors meld.
