Ingredients :-
Mutton - 500 gms
Basmati rice - 400 gms
Cumin - 1 tsp
Black pepper - 1 tsp
Star anise - 1 no
Cardamom - 3 nos
Cinnamon - 2 nos
Cloves - 8 to 10 nos
Coriander powder
Garlic - 5 piece
Green chillies - 2
Coriander leaf
Tomatoes - 3
Salt
Onion - 2
Ginger garlic paste - 1 tbsp
Water
Dried Lemon - 1
How to cook :-
1. Roast the cumin, black pepper, star anise, cinnamon, cardamom in a frying pan. Let it cool and grind it along with coriander powder into a fine powder.
2. Take a pressure a pressure cooker, add some oil and roast the onions. Once onions become little cooked, add the powdered spice and the ginger garlic paste.
3. Add the mutton. Then add tomato paste (2 tomatoes mixed in a mixer grinder) along with some salt. Mix them well. Then close the lid and let it cook for one whistle.
4. After one whistle, open the lid and add 3.5 cups of water, one green chilly and dried lemon. Then add the basmati rice (soaked for half an hour) and close the lid.
5. Let it cook for one whistle. Once it's done and the pressure is gone, open the lid and your very own Mutton Kabsa is ready to be served!
6. Making chilly paste for kabsa : Grind some garlic, coriander leaf, one green chilly, one tomato, some salt and some water using mixer grinder. This paste is a good companion for Kabsa.
