Ingredients:
500 grams beef tripe
500 grams assorted beef innards
1/4 cup tomato sauce
1/3 cup ginger strips
6 cloves garlic ( crushed)
1 large red onion (sliced)
1 small green bell pepper (strips)
1 small red green bell pepper (strips)
3 pieces green chilis (sliced)
1/2 tsp ground black pepper
1 small carrot
1 small sayote
5-6 tbsp white vinegar
1 tbsp soy sauce
1/2 tbsp fish sauce
1 beef cube
1 cup water
salt to taste
Boiling of beef intestines and other beef innards:
1. Parboil beef intestines for 10 minutes then discard water.
2. Boil again beef intestine together with other beef innards like heart, kidneys, etc. Put sliced gingers, peppercorns, lemongrass, and garlic.
3. Once beef innards are soft and tender, remove then set aside.
*Boil beef tripe for 30 to 45 minutes until soft and tender.
*You can also cook beef tripe for 20 to 30 minutes then add other beef innards. Continue cooking up to 45 minutes or until soft and tender.
*You can use pressure cooker for faster cooking.
