Ingredients
1 kg Chicken (bone-in pieces like thighs and legs work great)
2 cups Basmati rice (soaked for 30 minutes, drained)
2 medium Onions (thinly sliced)
2-3 Green chilies (slit)
1 tablespoon Ginger-garlic paste
1 teaspoon Cumin seeds
1-2 Bay leaves
2-3 Cloves
2-inch Cinnamon stick
2 Cardamom pods
1 teaspoon Turmeric powder
1-2 teaspoons Red chili powder (adjust to taste)
1 teaspoon Garam masala powder
Salt (to taste)
2 tablespoons Yogurt (optional, for marination)
2 tablespoons Oil + 1 tablespoon Ghee (for cooking)
Fresh coriander (for garnish)
4 cups Water (for rice cooking)
Steps
1. *Marinate Chicken*: Mix chicken with yogurt, ginger-garlic paste, turmeric, red chili powder, salt. Keep aside for 30 minutes (optional).
2. *Sauté Aromatics*: Heat oil + ghee in a pot. Add cumin seeds, bay leaves, cloves, cinnamon, cardamom. Let spices splutter.
3. *Cook Onions*: Add sliced onions; fry till golden brown.
4. *Add Chicken*: Add marinated chicken. Cook till it changes color (~5-7 minutes).
5. *Spices & Chilies*: Add green chilies, garam masala. Mix well.
6. *Add Rice*: Add soaked & drained rice. Gently mix for 2-3 minutes.
7. *Add Water*: Pour 4 cups water. Season with salt (adjust taste).
8. *Cook*: Bring to a boil. Reduce heat to low. Cover & cook till rice is done (~15-20 minutes).
9. *Rest*: Let pulao rest 5 minutes off heat.
10. *Garnish*: Top with fresh coriander.
