Ingredients:
5 eggs
1 bottle of OWYN vanilla protein shake (or 1.5 cups of milk)
1 cup greek yogurt
1tsp baking powder
1 cup rolled oats
1/3 cup of monk fruit sweetener
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
4 tbsp date syrup
2 scoops of vanilla protein powder
1/2 cup shredded carrots
Directions:
Whisk together wet ingredients. Protein shake/Milk, yogurt, eggs, and vanilla extract, Add the date syrup to the wet ingredients.
Whisk together the dry ingredients. Oats, cinnamon, baking powder, monk fruit, protein powder, cinnamon, nutmeg, and ginger,
Combine the wet and dry ingredients then mix in shredded carrots and let soak for several hours while the oats absorb the liquid. It will start very runny, but will become thicker as it stands.
Pour oat batter into an oven safe pan, sprayed with cooking spray or use parchment paper
Bake at 350 for 45-60 minutes, or until center is no longer wet.
Top cooked oatmeal with frosting. I waited till the baked oatmeal cooled off before putting frosting!
Frosting:
4 oz of cream cheese
1/3 cup of greek yogurt
2 tbsp of monk fruit sweetener
2 tbsp of sweet crème creamer
1/2 scoop of protein powder
mix everything together with a hand mixer till it reaches your desired consistency. Add more sweetener or milk if desired!
