This chicken pasta salad is very easy to make, you can make it ahead and serve it for lunch or a light dinner.

✔️ 2 ripe avocados pitted and diced
✔️ 2 medium cooked chicken breast cut into chunks
✔️ 1/2 cup chopped red onion
✔️ 1 pound cooked rotini pasta or similar
✔️ 1 cup cherry tomatoes, halved
✔️ Salt and fresh cracked pepper, to taste
✔️ 1/2 cup freshly chopped parsley
✔️ ½ cup mini seedless cucumber
✔️ ¼ cup feta cheese

✔️ 1 tablespoon Italian seasoning
✔️ 3/4 cup extra virgin olive oil
✔️ 1 Tbsp Dijon mustard
✔️ 1/2 cup rice vinegar
✔️ 1 cloves garlic
