Cheesy Tomato Tilapia
4 Tilapia Fillets
1/2 Cup EVOO
1/4 Cup Cracker Crumbs
1/4 Cup Parmesan Cheese, shredded
1 Tsp Smoked Paprika
Pint Rainbow Cherry Tomatoes, cut in half
1 Tbsp Balsamic Vinegar
To Taste Salt
Fresh Basil
2 Tbsp Capers
4 Garlic Cloves, minced
8 Mozzarella Cheese Slices
Preheat oven to 400 degrees
Pour 1/4 cup of EVOO on a baking tray
Roll the tilapia in the oil on both sides
Place cracker crumbs and parmesan cheese on a platter
Cover the tilapia with the cracker mixture
Place the tilapia back on the tray
In a bowl, mix tomatoes, balsamic vinegar, EVOO, salt, basil, capers, and garlic
Spoon the mixture around the tilapia on the tray
Bake for 10 minutes at 400 degrees
Take the tilapia out of the oven
Place at least 2 slices of mozzarella on each tilapia fillet
Put it in oven on high broil until cheese melts and starts to brown
Remove from oven and make sure fish is cooked through
Enjoy!
