Pork Belly Burnt Ends
1 slab of pork belly
sharp knife
favorite seasoning
Italian extra virgin olive oil
bbq sauce
Slice the pork belly into strips
Using the strips, cut the pork belly into cubes
put cubes into a pre-oiled bowl and add seasoning
hand mix the seasoning into the pork belly
let sit for at least 5-10 minutes so the seasoning binds to the meat
put pork belly directly on the grill grates
As noted in the video, I smoked these at 250 degrees for 3 hours, I then put them in an aluminum pan, sauce them up and return them to the smoker for 1 hour. The result is a "meat candy" experience like no other. If you attempt these, I would love to see your finished result!
