Creamy Tarragon Chicken with Cheesy Mashed Potatoes
I first got the inspiration for this dish from a @RachaelRay 30-Minute Meals episode years and years ago, and I always come back to it! I’ve tweaked it over the years; sometimes I add mushrooms, sometimes spinach or kale. Either way, it’s always delicious and a perfect quick and easy weeknight meal.
The mashed potatoes are my go-to recipe, and the perfect way to use up that random block of cheese hiding in your fridge.

🥔 Cheesy Mashed Potatoes
Ingredients:
• 2 lbs Yukon gold potatoes, quartered
• 1 pack of garlic (6–8 cloves, peeled)
• 1/4–1/2 cup heavy cream
• 8 oz cheese (Brie or cream cheese is delicious, I used a herb goat cheese)
• Pepper & chicken bouillon (used as salt) to taste
Instructions:
1. Place potatoes, garlic, and 2 tbsp chicken bouillon in a pot. Cover with water and bring to a boil.
2. Cook until fork-tender, drain, and return to the pot.
3. Add heavy cream and cheese; mash until creamy.
4. Season with pepper and extra bouillon or salt to taste.

🍗 Creamy Tarragon Chicken
Ingredients:
• 2 lbs boneless, skinless chicken thighs
• 2 tbsp EVOO
• 3 tbsp butter (divided)
• 2 large shallots, peeled & sliced
• 6–8 garlic cloves, grated
• 2 cups white wine
• 1 cup heavy cream
• 4 tbsp Dijon mustard
• Juice of 1 lemon
• 1/2 cup fresh tarragon leaves, stemmed & roughly chopped
• 1/2 cup parsley, chopped
• Chicken bouillon + pepper (to taste)
• Red pepper flakes (optional)
Instructions:
1. If chicken thighs are large, cut in half. Season with salt & pepper.
2. Heat skillet over medium-high with EVOO + 2 tbsp butter. When foamy, sear chicken 3 min per side until browned, remove and set aside.
3. Sauté shallots and garlic for 1 min.
4. Add wine, reduce by half (the rest if the Chefs treat 😉).
5. Stir in 1 tbsp bouillon, 1 tbsp butter, red pepper flakes, Dijon, lemon juice, and cream; bring to a simmer.
6. Add tarragon, return chicken to pan, and cook until warmed through (165°F).
7. Serve the mashed potatoes with the juicy chicken and plenty of sauce, top with parsley and ENJOY!
