Dried persimmon, a harbinger of winter, is a traditional treat in East Asia. Persimmons come into two general types: the sweet type which can be eaten straight away as a fresh fruit; and the bitter type which are used in making dried persimmon as in this video. The process of making dried persimmons is quite simple:
1. Peel off the persimmon skin
2. Lightly rinse in boiling water to sterilise
3. Hang in a cool, ventilating and sheltered place for one month
A read-to-eat dried persimmon should reduce to about one-third of its original size. You can store them for months in a freezer.
Tips:
Make sure to pick the bitter type persimmons
Keep the bit of branch on top of the persimmons for hanging
Kneed the persimmons on a daily basis to increase the texture
