Sweet and Spicy Tomato Jam (Note that this is not safe for canning. This is a refrigerator jam only)
1 T Coconut Oil
2 t Ground Cumin
1 t Ground Coriander
1.5 t Ground Cinnamon
1 t Red Pepper Flakes
1 Small Onion, diced
4 Garlic Cloves, thinly sliced
2 t Grated Fresh Ginger
1 lb Fresh Tomatoes, washed and chopped
1/4 c Sugar or Heat-Safe Sugar replacer. (I use Allulose)
2-3 T Syrup or Honey. (I use Rx Sugar, Maple Flavor, made with Allulose)
1/2 Bunch of Cilantro, chopped
1. Melt the oil in a large sauce pan.
2. Make sure you have everything chopped and prepped to go. This will be a very quick process.
3. Add the spices and stir briefly in the hot oil to bring out the flavors.
4. Add the onions, garlic and ginger, and stir in the oil and spice mixture. Sauté for a minute or so.
5. Add the tomatoes, the sweetener and the syrup.
6. On Medium-High heat, stirring often, cook the tomato mixture down for about 20 minutes, until you can drag your spoon across the bottom of the pan, and the pan stays clear briefly.
7. Once it's reduced, remove from heat. Let cool briefly, then stir in the cilantro.
8. Refrigerate, then serve when ready. It will keep in the fridge for several days.
