I've taken all the elements of the famous North Indian street food, Chilli Cheese Toast, and have stuffed it into a paratha to make the most delicious portable snack!
A tender paratha dough is stuffed with cheese, chillis, onions, and spices, rolled out until thin and cooked until slightly charred on the outside, and super gooey in the middle :D
Every time I serve this to friends and family, they go crazy for it! Such a great dish for entertaining.
Note: these can be made ahead, stacked between wax paper in a resealable plastic bag, and frozen before being cooked. You can pull out a couple from the freezer anytime you want and cook them up on a hot pan.

RECIPE
INGREDIENTS
1 cup, Whole Wheat Flour
1 cup, All Purpose Flour
1 tsp, Salt
1/4 cup, Canola/Vegetable Oil
3/4 cup of water, or more to form dough
1.5 cups, grated Mozzarella Cheese
1.5 cups, grated Cheddar Cheese
1/4 cup, chopped Coriander
3 Thai Chillis, finely chopped
1 small Red Onion, finely chopped
1 tsp, Cumin Powder
1/4 tsp, Salt
Butter
To form dough, combine, flours and salt, and stir to combine. Add oil into flour mixture and mix by hand, until mixture resembles coarse breadcrumbs. Slowly add water, and mix until a soft dough forms. Allow to rest for 15 minutes.
In a bowl mix together cheeses, coriander, chillis, onion, cumin, and salt.
Place a golfball size piece of dough on a floured surface, and stretch to form a circle at least 4 inches wide. Stuff with 1/4 cup of cheese mixture leaving a border of dough on the edges. Carefully pull in dough from the edges towards the middle, and pinch close.
Flip stuffed dough over, so that the pinched side is on the bottom, and gently roll with a rolling pin on a lightly floured surface, until approximately 7-8 inches in diameter.
Place in a pan on high heat, and cook for 2 minutes on each side until browned and puffy.
Brush with butter on both sides, and enjoy right away :)
