🥥 INGREDIENTS
Sponge Cake
5 large eggs (room temperature)
150 g sugar
120 g all-purpose flour
30 g almond flour
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
White Chocolate Coconut Cream
300 g white chocolate
400 ml heavy cream (divided)
250 g mascarpone cheese
80 g unsweetened shredded coconut
Filling & Texture
80–100 g almonds (lightly toasted, chopped)
80 g waffle sheets or wafer cookies
Decoration (Optional)
Coconut flakes
White chocolate shavings
Whole almonds
👩🍳 STEP-BY-STEP INSTRUCTIONS
1️⃣ Sponge Cake
Whip eggs and sugar until pale and fluffy. Gently fold in vanilla, flour, almond flour, baking powder, and salt. Bake at 175°C / 356°F for 30–40 minutes. Cool completely and slice into layers.
2️⃣ Cream Preparation
Warm half of the cream and pour over white chocolate. Stir until smooth and cool. Whip remaining cream to soft peaks. Mix mascarpone with cooled white chocolate, then gently fold in whipped cream and coconut.
3️⃣ Assembly
Layer sponge with cream, almonds, and crushed waffle pieces. Repeat. Cover the cake with remaining cream.
4️⃣ Decoration & Chilling
Decorate with coconut and white chocolate. Refrigerate for at least 4 hours (overnight recommended).
