Jeera Rice is a very popular 1 pot recipe consisting fried rice flavoured with cumin seeds and a few other spices.
It is an easy and quick recipe that goes with any gravy like chholey, Rajma, Paneer, Dal, Kadhi, Raita and so on.
Jeera Rice is made in two ways – with raw rice and with boiled rice. It may be cooked with raw rice in a pot, pressure cooker or in an instant pot.
Here we have prepared it with raw rice, cumin seeds & a few whole spices, in a pot.
Jeera rice is an easy recipe but many times, the rice gets sticky & mushy or it does not cook well. The ratio of rice and water is very important to make perfect jeera rice. Quality of rice also matters a lot.
Some tips for making perfect Jeera Rice in a pot
Long grain aged Basmati rice is best for making jeera rice. However any rice available can be used for it.
Rice should be rinsed properly to remove its starch but delicately as rice grains may break.
Ideally rice should be soaked for 20 – 30 minutes before cooking but jeera rice can also be made without soaking the rice.
For the rice soaked for 20 30 minutes, ratio of rice & water should be 1:1 ½ i.e. for 1 cup / glass / bowl raw rice 1.5 cups / glasses / bowls water should be used.
If you like a little bit more cooked rice or your gas burner is big, rice and water can be taken in the ratio of 1:1¾ i.e. for1 cup / glass / bowl raw rice water should be 1.75 cups / glasses / bowls.
If the rice is not soaked, the ratio should be 1:2 i.e. for 1 cup / glass / bowl raw rice, 2 cups / glasses / bowls of water.
It is better to cook jeera rice in ghee however oil also can be used. It makes the rice non-sticky.
A small quantity of lemon juice may be added to rice while cooking. It helps in making rice white & non- sticky.
When the rice is cooked, turn off the flame and leave the pot covered at least for 10 minutes as we cook the rice 90% on flame & 10% without flame.
After opening the lid if rice is not cooked up to your satisfaction, you can transfer the pot to a griddle (tava) & cook the rice for 5 minutes more on low flame. After 5 minutes turn off the flame & leave the pot covered for 10 minutes.
