Pistachio kunafa Stuffed Dates || How to make Dubai Chocolate Covered Dates for Ramadan Recipe - RKC
During Ramadan you can Make these viral Dubai chocolate-inspired stuffed dates. Pistachio Kunafah stuffed dates easy to make and sharing them with family and friends is even more enjoyable. Happy Ramadan everyone
INGREDIENTS
20 medjool dates, large, soft and fleshy
For the pistachio filling
1/2 packet kunafa pastry chopped
200g pistachio paste
2 tbsp Tahini paste
For the chocolate
1 cup milk chocolate or dark one
1 tsp coconut oil
Top with
Pistachio chopped
INSTRUCTIONS
In a large skillet add the butter and toast the kunafa pastry. You can get it broken into fine pieces or just cut it yourself. Allow it to toast on low heat until lightly golden brown. Once it’s golden color and crispy remove from the heat and allow to cool.
In the mean time melt the chocolate with coconut oil either in the microwave or double boiler (whatever you are comfortable with), once smooth, set aside to cool.
Make a slit into each date and remove the seed, repeat with all the dates, set aside.
In a mixing bowl add the pistachio chopped, pistachio paste and tahini and then the toasted kunafa pastry, stir together until combined.
Stuff each date with 1 tbsp of the pistachio filling.
Now dip the stuffed dates in the melted chocolate, try to have a thin layer. Put it on the parchment-lined tray. Garnish with chopped pistachios.
Let them rest in the refrigerator for 10 minutes or until the chocolates has set.
