Our Rhubarb Almond Crisp is simple, seasonal, and exactly what we want on the table all summer long. Crisp oats, toasted almonds, and tangy rhubarb come together in the most comforting, just-sweet-enough way.
🍓 Ingredients
Filling:
4 cups fresh (or frozen*) rhubarb, chopped
½ cup white sugar
2 tbsp arrowroot powder (or cornstarch)
Topping:
2 cups rolled oats
½ cup almond flour
¼ cup sliced almonds, chopped
½ cup brown sugar
¼ tsp sea salt
½ cup cold unsalted butter
👩🍳 Instructions
Preheat oven to 375°F (190°C).
Wash and chop rhubarb. Toss with sugar and arrowroot.
Transfer to a greased 8” x 8” baking dish.
In a bowl, combine oats, almond flour, chopped almonds, brown sugar, and salt.
Cut in cold butter until the topping forms a sticky crumble.
Spread topping over the fruit and bake for 35–40 minutes.
Let cool for 15 minutes before serving.
👉 Using frozen rhubarb?
Defrost in a strainer and add 2 extra tablespoons of arrowroot to account for moisture.
I love serving this warm with a scoop of vanilla ice cream or a dollop of whipped cream. 🍨
