🦪 Ingredients
Fresh or thawed scallops (as many as you like)
Clarified butter (ghee) – for high-heat cooking without burning
Salt
A few garlic cloves, smashed
Fresh parsley, finely chopped
👨🍳 Instructions
1. If frozen, thaw scallops slowly in the fridge overnight or in a sealed bag in cold water.
2. Remove the tough side muscle from each scallop.
3. Pat scallops completely dry on both sides — moisture is the enemy of a golden crust.
4. Season lightly with salt right before cooking.
5. Smash the garlic cloves and chop the parsley.
6. Heat a stainless steel or cast-iron pan until very hot — test with the dancing drop: if a drop of water skitters across, it’s ready.
7. Add clarified butter to the pan.
8. Place scallops in and sear for 90 seconds, untouched.
9. Flip, add garlic, and cook another 60 seconds while spooning the butter over them.
10. Turn off heat, add parsley, and baste again.
11. Serve immediately, drizzling the garlic-parsley butter over the scallops.
