Come Chinese New year and we start to bake Hup Toh Soh, literally translated for Crumbly walnut cookies. For the Cantonese, this cookies is a must to have for the family. My late aunt used to joke that it resembles the brain so hoping when you eat more walnut, it makes you brainy and intelligent.
Ingredients:
450 g All Purpose Flour
1 tea sp Baking Powder
1 tea sp Baking Soda
120 g Icing Sugar or grinded fine sugar
1 1/2 tea sp Salt
150 g Grounded Walnut power
Mix all the powders well and add,
1 Egg Yolk
350 g Sunflower Oil or any cooking oil
Stir in egg yolk, oil and incorporate to a dough.
Roll into sausage and make big marble shape ball. Top with a piece of walnut (Optional)
Egg Wash
2 Egg Yolk
1 Table Sp Water
Mix Well and brush on cookie ball.
Preheat oven at 170 or 180 deg C for 15 mins. Bake for 20 mins. Do try baking for the family. Enjoy!
(My childhood memory is the cookies can be bitten at least 2 to 3 times.)
