Sweet Potato Pie

4 Large, sweet potatoes
½ stick unsalted butter
½ cup white sugar
½ light brown sugar
1 tbsp cinnamon
1 tsp nutmeg
1 tsp all spice
1 tbsp lemon juice
1 tbsp vanilla
1 tbsp vanilla butter nut
½ cup half & half
2 eggs slightly beaten.
 
Wash the sweet potatoes then poke some holes in it with a fork. Place them on a baking sheet and bake 375 degrees for about an hour, or until they are tender. Remove them from the oven and let them cool. Peel and mash the potatoes up in a large bowl then take your electric mixer and mix until smooth. Add in butter, white sugar, brown sugar, cinnamon, nutmeg, all spice, lemon juice, vanilla, vanilla butter nut half and half eggs. Mix until it’s all incorporated. Pour batter in pie crust and bake 350 degrees for 45 to 50 minutes. Remove from oven and allow to cool.
