Crispy on the outside, soft and cheesy inside 🧀
These mashed potato cakes are stuffed with mozzarella, air-fried until golden, and served with a creamy mushroom–shallot sauce.
🧾 Ingredients:
Potato Cakes (Makes 6 Large Cakes):
– 2lb Potatoes, boiled in skin → peeled
1 egg
– 2tbsp Flour (to bind; add until dough is workable)
– 6 oz Mozzarella, cut into 6 pieces (for stuffing)
– Salt (to taste)
– 1tbsp Butter (melted or softened — added midway for crispiness)
– Oil spray (optional for air fryer)
Creamy Mushroom Sauce:
– 1 Shallot
– 1lb Mushrooms
– 1tbsp Flour (to thicken)
– 100 Sour cream
– Water depending on desired sauce consistency
– Salt & pepper
🍳 How to make it:
1️⃣ Boil potatoes in skin, peel, and mash.
2️⃣ Add egg and flour until dough is soft but shaped easily.
3️⃣ Form 150 g patties and stuff each with mozzarella.
4️⃣ Air fry until lightly golden → add a small amount of butter on top → continue air frying until crispy.
5️⃣ Prepare the sauce: sauté shallots + mushrooms, add flour, then sour cream + water. Simmer until creamy.
6️⃣ Serve the crispy potato cakes with the mushroom sauce.
