Spicy Veggie Curry in Your Wok

Описание: DIRECTIONS: Smoke at least four jalapeno peppers in an electric smoker at 220 degrees for about 4 hours. Wearing plastic gloves, chop a couple of those up. Save at least two tablespoons of chopped pepper and add the rest to a cup of olive oil and let those soak for at least two hours, or overnight. To an electric wok or skillet on the stovetop, add 2 tablespoons canola oil and get that sizzling on high heat. Add a teaspoon of sesame oil. Add 1/2 a diced red onion, 2 cloves chopped garlic, 1 chopped carrot, 2 chopped celery stalks. Saute for about three minutes. Add reserved chopped smoked jalapeno and two tablespoons of your pepper-infused oil. Add 1 heaping tablespoon fresh grated ginger. Then add any other veggies you like-- I added sliced mushrooms, lots of baby kale, dried basil. Add 1-2 tablespoons curry powder. Stir well. Add one 14.5-ounce can unsweetened coconut milk. Stir well. Taste to check how spicy it is, and add more jalapeno oil (with bits of the peppers) if you'd like more heat. Add 1/8 cup vegetable broth or more if sauce is too thick. Cover the pan and saute for an additional 3-5 minutes. Serve over rice. Top with chopped scallions, cilantro and sesame seeds. ENJOY.
