Ingredients:
🍪For the Cookies:
1 1/4 Cups Gluten Free All Purpose Flour (I use King Arthur)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
3/4 cups Monk Fruit Sugar (or your favorite sweetener)
1/4 cup butter softened
1/2 cup Pumpkin
1 egg
❄️For the Glaze:
1 tsp vanilla
1 Cup Powder Sugar
1-2 TBSP Milk
1 TBSP butter softened
✍️Instructions:
1️⃣ Preheat oven to 350℉ & line baking sheets with parchment paper
2️⃣ Combine butter and sugar, mix well
3️⃣ Beat in pumpkin, egg, and vanilla
4️⃣ Add dry ingredients: GF Flour, baking soda, baking powder, cinnamon, salt
5️⃣ Drop by rounded tablespoon onto prepared baking sheet.
6️⃣ Bake 12-15 minutes or until edges are firm. Let cool on baking sheets for 2 minutes then move to wire rack to cool completely.
7️⃣ Make the glaze by combining powdered sugar, milk, butter, and vanilla until smooth. Drizzle over cookies and enjoy.
