These matcha cashew truffles are a simple no-bake dessert inspired by naturally sweet, nourishing ingredients. Matcha, a finely ground green tea powder, is valued for its earthy flavour and antioxidant content, and pairs beautifully with creamy nuts and gentle sweetness.
Blended cashews form a smooth, rich base, while ground almonds and oat flour add structure without the need for baking. Sweetened lightly with maple syrup or honey, these truffles are balanced rather than overly sweet, allowing the matcha flavour to shine through. A thin coating of white chocolate adds contrast and a subtle sweetness that softens the earthiness of the green tea.
This recipe is ideal for make-ahead desserts, gifting, or a small treat with coffee or tea. With minimal ingredients and no oven required, it is an approachable way to use matcha in baking-style recipes while keeping flavours clean and refined.
Ingredients:
120 g cashews
½ cup ground almonds
½ cup oat flour
⅓ cup maple syrup or honey
1½-2 tsp matcha powder
Pinch of salt
Optional: ½ tsp vanilla
80-100 g white chocolate
1 tsp coconut oil
Method:
Blend the cashews in a food processor until smooth and creamy. This may take up to 10 minutes. Add ground almonds, oat flour, maple syrup, matcha, salt (and vanilla). Mix until a thick, smooth dough forms.
Form into 8 balls (about ping-pong size). Chill in the fridge for 20-30 minutes until firm.
Gently melt the white chocolate and coconut oil over simmering water until smooth and runny. Dip or spoon over the chilled truffles. Chill briefly to set.
Optional finish: dust with matcha or sprinkle crushed pistachios.
