For a 1.1 kg Behrouz Chicken Biryani, here's a recipe:
Ingredients:
1.1 kg chicken, cleaned and cut into pieces
1 kg basmati rice, washed and soaked for 30 minutes
2 large onions, thinly sliced and fried until golden brown
1 cup yogurt
4 tablespoons biryani masala
2 tablespoons ginger-garlic paste
A handful of mint and coriander leaves, chopped
Saffron strands soaked in warm milk
Ghee for frying and flavor
Cashews and almonds for garnish
Instructions:
1. Marinate the chicken with yogurt, biryani masala, ginger-garlic paste, and chopped mint and coriander leaves. Let it marinate for at least 2 hours.
2. In a separate pot, parboil the soaked basmati rice until it's 70-80% cooked. Drain and set aside.
3. In a large, heavy-bottomed pot, layer half of the partially cooked rice, followed by the marinated chicken, fried onions, and the remaining rice.
4. Drizzle saffron-infused milk over the layers and sprinkle some biryani masala.
5. Cover the pot with a tight-fitting lid and cook on low flame for 20-25 minutes or until the chicken is fully cooked and the rice is tender.
6. In a small pan, heat ghee and fry cashews and almonds until golden. Add this to the biryani for added richness.
7. Allow the biryani to rest for a few minutes before serving.
