Vegetarian Fajita Recipe

1 tablespoons olive oil
2 capsicum peppers, sliced
1 onion, sliced
1 packet of fajita seasoning mix
1/4 cup water (I used chicken stock)
1 cup grated cheese
1 tin kidney beans
1/4 cup fresh coriander
Tortillas
Salt and pepper, to taste (if needed to season filling mixture)

Coriander and lime dressing
Blend together
2 cups fresh coriander
½ Greek yoghurt
1 garlic clove
¼ cup lime juice
2 teaspoons honey
½ teaspoon ground coriander
½ teaspoon salt
½ cup olive oil
Green chillies (according to taste)
