Ingredients (for 2 servings):
300 g lean ground meat
100 g zucchini
100 g kidney beans
100 g cucumber
100 g corn
200 g arugula
1 onion
2 garlic cloves
1 tsp marjoram
1 tsp curry powder
2 tbsp olive oil
Salt and pepper to taste
For garnish: parsley and cherry tomatoes
Instructions:
Preparation:
Finely dice the onion.
Wash the cucumber and zucchini, slice into 1 cm rounds, cut into sticks, then dice.
Sautéing:
Heat a pan, add olive oil, and sauté the onion until translucent.
Add the ground meat and cook until browned.
Press the garlic cloves and mix them in.
Adding Vegetables:
Add kidney beans, corn, cucumber, and zucchini. Cook briefly, ensuring the vegetables remain crisp.
Seasoning:
Season with salt, pepper, marjoram, and curry powder. Mix everything well and adjust seasoning to taste.
Arugula:
Add the washed arugula, fold it in quickly, and serve immediately.
