Poppycock Caramel Corn

Описание: This is a treat from my childhood called poppycock! It is from an old cookbook my mom has. It's a classic recipe, I believe poppycock is named after a specific brand, but like a lot of brands, it takes over to become the name of it. It is essentially caramel corn with nuts that get candied as well. I use pecans and walnuts, but you can use any nut you'd prefer. My mom always made poppycock a little different than caramel corn it is basically the same recipe but we use more popcorn than it calls for so you don't have every piece coated in caramel and you have just enough covering the popcorn and the nuts. When I make caramel corn, I have a more proportionate amount of caramel to popcorn, also heat the popcorn up so it coats everything perfectly, and I cook the caramel to a specific temperature. With poppycock, you just boil the caramel for 5 minutes, and that is it, no temping and no fuss. When my mom made this as a kid I always would pick out the candied pecans to eat so the beauty of making it as an adult you can add as many pecans as you'd like I always go a little heavy handed. There are still a lot of festivities and celebrations for Christmas. This is the perfect treat to put out at your gatherings, even for New years! It's a crowd pleaser!


4-5 quarts popped popcorn (air popped is best)
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1/2 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup of pecans
1 cup walnuts

Melt the sugar, butter, corn syrup, and salt. Bring to a boil for 5 minutes. Add baking soda and vanilla.
Pour over popcorn and nuts. Bake at 250° for 1 hour, stirring every 15-20 minutes.

*You can use any nut variety you'd like*
