Ceviche De Corvina - serves 4
Ingredients
-1lb fresh white fish - sea bass is preferred but halibut works
-3/4C fresh squeezed lime juice (7-8 large limes)
-2T white vinegar
-1 small white onion minced
-1/2 habanero pepper minced (start with less and build up slowly if you don’t want it to be too spicy)
-2T minced cilantro
-1/4C minced tomato
-Salt to taste
Optional
1 avocado
1 mango
Cilantro for garnish
Directions- let the fish cook in the lime juice for at least 3-6 hours or over night!


Patacones or Tostones
2 green plantains
Avocado oil or any frying oil
1 garlic clove
Salt to taste
Directions: heat oil on medium high, add garlic and stir it for 30 seconds and immediately remove. Add chopped plantains, cook for 1-2 minutes per side. Remove from oil, turn stove to low and begin smashing the plantains. Bring oil back up to medium high and fry the smashed plantains for about 2 minutes per side or until golden brown. Remove from oil and salt to taste.
