Rougail or rougaille is a classic, tomato-based, Creole dish and is a specialty in the islands of Réunion and Mauritius. The most popular version is actually made with saucisse or sausage. If I want a lighter dish, I'd go for the variation with shrimps or prawns, which is what I am sharing with you today. Back in France, this was one of my go-to dishes because it's absolutely easy to make and oh so delicious!
If you want to make it kid-friendly or if you're just not a fan of heat, you can just omit or lessen the chili pepper or cayenne.
Serves 4-6
Ingredients:
1 kilo jumbo shrimps or prawns (about 32 pieces)
1 can whole peeled tomatoes (400 grams)
1 pc. onion, yellow or red
6 cloves garlic
1 thumb ginger
1 tsp. turmeric
1 tsp. thyme
green or red bird's eye chili, which I substituted with cayenne pepper
olive oil
salt
pepper
coriander (wansoy), for garnish
