Insulating the shop ceiling is very important for several reasons. It makes the shop more comfortable with temperature but also helps to reduce moisture buildup. I am using R-19 fiberglass insulation with craft backing. Staples are used to attach the insulation to the 24" on center roof trusses. On the eves I am using Styrofoam baffles. These foam channels allow air to flow from the vented soffits to the ridge cap. This pulls how air from the lower part of the roof to the upper part and takes moisture with it.
