Tomato Sugo is a staple in every Italian kitchen. It’s the best sauce to have homemade and on hand, ready for use in your weeknight cooking.
Cherry tomato sugo
Preparation time: 5 mins
Cooking time: 40 mins
Ingredients:
100 mls olive oil
1 brown onion, peeled and finely diced
2 cloves garlic, finely sliced
1 tbs tomato paste
1 ½ tbs sugar
6 puns cherry tomatoes, cut in half
1 piece parmesan rind
1 ½ tbs red wine vinegar
Method:
In a large saucepan on a medium heat, place the olive oil, then add in the onion and garlic, and sweat for 4-5 mins whilst stirring, until fragrant and translucent.
Add the tomato paste and sugar, stirring for 2 mins until roasted off. Add in the parmesan rind and the cherry tomatoes, season with salt, cover with a lid and cook on a low heat for 40 mins or until the cherry tomatoes have broken down and are a saucy consistency. Stir occasionally. Add in your vinegar, then take off the heat.
Remove the parmesan rind. Using a stick blender, blend the tomatoes until smooth, season to taste with salt and pepper.
