Ingredients:
Crust:
200g Graham crackers
¼ teaspoon cinnamon
¼ teaspoon ground ginger
100g unsalted butter, melted
Cheesecake mixture:
750gr cream cheese, room temperature
150g granulated sugar
1 ½ teaspoons vanilla extract
2 larger eggs, room temperature
1 egg yolk, room temperature
200ml light sour cream, room temperature
Zest of 1 lemon, finely grated
1 tablespoon lemon juice
Pinch of salt
150ml strawberry sauce
Strawberry sauce:
500gr fresh or frozen strawberries (if you use frozen, thaw them first)
50g granulated sugar
3 teaspoons cornstarch
Instructions:
Strawberry sauce:
1. Add all the ingredients to a blender and mix until you get a strawberry puree.
2. Pour the puree into a small saucepan and cook at a medium-high temperature until bubbles appear. Stir occasionally.
3. When the bubbles become large and thick, cook for another 4-5 minutes, until the puree thickens a little and darkens.
4. Strain the mixture through a fine-mesh strainer. You can do this several times to remove as many seeds as possible.
The crust:
1. Grease a 22cm round spring form tin and line with baking paper. Preheat the oven to 160C or to 140C fan forced.
2. Melt the butter and pour it over the Graham crackers, cinnamon and ground ginger. Press firmly into a mold and bake for 10 minutes.
3. When the crust is baked, set it aside.
The cheesecake mixture:
1. In a large bowl, beat the cream cheese first. Beat it on a medium-high speed for about 2 minutes or until your cream cheese is smooth and creamy.
2. Then add sugar and vanilla extract and beat until all the ingredients are combined.
3. One by one, add eggs and egg yolk. Beat just until all the ingredients are combined.
4. Finally, add sour cream, salt, grated lemon zest, lemon juice, and beat.
5. Add half of the mixture to the previously baked crust and spread it nicely so that the crust is evenly covered.
6. Over the cheesecake mixture, add a couple of teaspoons of strawberry sauce.
7.With a spoon or spatula, carefully spoon over the remaining cheesecake mixture.
8. Finally, add a couple of teaspoons of strawberry sauce again and run a knife through these circles to get the cute swirls.
9. Bake for 45-50 minutes. When the cheesecake is done, there should be a slight wobble in the center. Leave it for another 30 minutes in a closed switched-off oven.
10. After 30 minutes, take the cheesecake out of the oven and leave it at room temperature for a minimum of 45 minutes. Cover it with foil and put it in the fridge for a minimum of 2-3 hours.
