Ingredients:
CHEESEBALL:
1/4 yellow bell pepper
1/4 red bell pepper
100g bacon (frozen, so it can be easily sliced)
500g cream cheese
200g shredded cheddar cheese
Fresh Italian parsley
Fresh rosemary (optional)
TWO-MINUTE KETO CRACKERS (~12-15 crackers):
50g grated parmesan cheese
50g finely ground blanched almond flour
2 tsp water
CHEESE BOARD:
Cheddar cheese
Colby Jack/Stripey Jack cheese
Mozzarella cheese
Any cheeses you like
Olives
Fresh rosemary
STRAWBERRY SANTAS:
100g cream cheese
1.5 tbsp powdered erythritol
50ml heavy whipping cream
10g dark chocolate + 20ml heaving whipping cream
Around 20 strawberries
Instructions:
CHEESEBALL & CRACKERS:
1. Cut bell peppers into dices. Cut frozen bacon into strips with a sharp knife.
2. Fry the bacon over medium heat until crispy. Drain on paper towels.
3. Soften cream cheese at room temperature and with a spoon. Mix cream cheese, cheddar cheese and bacon to form a cheeseball. Shape the cheeseball into a cone, press finely chopped parsley on the surface to resemble a X'mas tree. Decorate with diced bell peppers and rosemary.
4. To make the crackers, mix almond flour and grated parmesan cheese. Add 1tsp of water, mix well, then add another tsp of water. Press the mixture to form a dough.
5. Roll out the dough with a rolling pin, cut out some crackers with a pizza cutter. Pop it into the microwave for 1 min + 1 min. The crackers will crisp up as they cool.
CHEESE BOARD:
Place branches of fresh rosemary on a plate to form a wreath like shape. Place cheeses and olives of your choice on top. I used colby jack, stripey jack and mozzarella.
STRAWBERRY SANTAS:
1. Cream together soften cream cheese and powdered erythritol. Add heavy whipping cream and beat until fluffy.
2. Cut off the stem and tip of each strawberry. Pipe cream cheese mixture on the larger bottom part of the strawberries. Top with the tips of the strawberries and pipe a dot of the cream cheese on top to resemble the hat of the santa.
3. Melt dark chocolate with heated heavy whipping cream. Dot two eyes in the middle of the cream cheese swirl with melted chocolate. Use a tiny bit of strawberry for the nose.

原料:
芝士球:
1/4 黃色甜椒
1/4 紅甜椒
100克 煙肉(冷凍,會較容易切條)
500克 忌廉芝士
200克 車打芝士碎
新鮮番茜
新鮮迷迭香(可省略)
兩分鐘生酮餅乾(約 12-15塊):
50克 巴馬臣芝士粉
50克 細磨去皮杏仁粉
2茶匙 水
芝士拼盤:
車打芝士
科爾比傑克/條紋傑克芝士
莫扎里拉芝士
任何你喜歡的芝士
橄欖
新鮮的迷迭香
士多啤梨聖誕老人:
100克 忌廉芝士
1.5 湯匙 赤蘚糖醇粉
50毫升 鮮奶油
10克 黑朱古力 + 20克鮮奶油
約20顆 士多啤梨
指示:
芝士球和餅乾:
1.甜椒切粒。用鋒利的刀將冷凍煙肉切成條狀。
2. 用中火將煙肉煎至酥脆。用紙巾稍為吸油。
