Easy Chinese Chicken Sweetcorn Soup

One of the best Chinese takeaway dishes - today we're showing you how to make mum’s iconic chicken sweetcorn soup. Super comforting and simple to make yet so delicious, the recipe is below as always and enjoy 🌽
Note: this dish was cooked in a takeaway kitchen with a big wok burner so timings may be a little different in a home kitchen (may take slightly longer for the chicken to cook at home)
Serves 2
For the soup:
1/2 large cooked chicken breast
1/2 tin cream style sweetcorn (205ml)
1 egg
For the seasoning mix:
1 tbsp chicken powder
1/4 tsp white pepper
1/2 tsp salt
1/4 tsp MSG
1/4 tsp sugar
1 1/2 tbsp cornstarch
120ml water
For cooking:
3 ladles water
1/8 tsp (dash) dark soy sauce
1 tsp sesame oil
1 spring onion
1 tbsp chilli oil @mamayuchillioil
Thinly slice your spring onion and dice your chicken.
Prepare the seasoning mix in a bowl. Whisk the egg and set aside.
Add 3 ladles of water to a wok on medium-high heat, when it starts to boil add your diced chicken and cream sweetcorn. Stir then add your prepared seasoning mix from earlier.
When the soup starts to thicken add your whisked egg and gently push from one edge of the wok to the other, fold a few times to lightly scramble.
Add dark soy and sesame oil, mix gently then take off the heat.
Serve with spring onions and chilli oil, and enjoy.
