EASY VEGAN RAMEN 🍜🤤 like a hug in a bowl!

Making ramen is easier than you might think! Here is the recipe on how to make the richest umami broth with just a few simple ingredients:

RECIPE (2 portions)
2 tbsp sesame oil
2 garlic cloves
2 scallions
1 inch piece ginger
2-3 tbsp miso paste
1 l water
4 dried shiitake mushrooms
1 small piece kombu (optional)
salt to taste
1 tbsp soy sauce
1 tsp brown sugar
2 tbsp tahini

Optional add-ins:
160 g noodles of choice
mushrooms
1/2 pak choi
fresh veggies (carrot, cucumber etc.)
baked/fried tofu
chili oil
sesame seeds

❶ Start by sautéing the garlic, spring onions, and ginger in sesame oil. You can leave in the scraps as you will strain the broth later on!
❷ Add the miso paste, then deglaze with a splash of water. Whisk to combine the miso paste and water into a thick paste, then add the remaining water as well as the dried mushrooms and kombu.
❸ Let the broth simmer for 30-45 minutes, then strain.
❹ In the meantime prepare your add-ins of choice. Blanch a few leaves of pak choi, fry a handful of mushrooms and cook the noodles.
❺ Finally combine soy sauce, brown sugar and tahini in your bowl. Pour over the broth, assemble your add-ins and enjoy!
