Simple Indo-Chinese starter, made with fried mushrooms, onions and green bell pepper.
MUSHROOM SALT & PEPPER
INGREDIENTS:
(MARINATION & FRYING)
BUTTON MUSHROOM – 200 g (each mushroom cut into 4 pieces)
BESAN (CHICK PEA FLOUR) – 2 tbsp
CORN FLOUR – 1 tbsp
SALT – 1 tsp
WATER – add water in parts to make a thick batter (refer the video)
REFINED OIL – for deep frying the mushrooms
(FOR STIR- FRYING)
REFINED OIL – 1 tbsp
ONION (roughly chopped) – 2 (small)
GARLIC (finely chopped) – 4 to 5 cloves
GREEN CHILLIES – 2 (pierced)
GINGER (chopped) – 1 tsp
GREEN CAPSICUM (finely chopped) – 2 tbsp
SALT – to taste
VINEGAR – 2 to 3 drops
CORIANDER LEAVES (finely chopped) – 1 tbsp
SPRING ONIONS (finely chopped) – 6 to 7
BLACK PEPPER POWDER – 2 tsp
FRIED MUSHROOMS
PROCEDURE:
(FOR MARINATING MUSHROOMS)
-Wash, clean and cut each mushroom piece into 4 equal parts and place it into a bowl
-Add besan (chick pea flour), corn flour and 1 tsp of salt
-Mix all the dry ingredients with the mushroom pieces
-Add in water little by little to make a thick pakoda batter consistency as shown in the video
-Marinate for 15 minutes
(FOR DEEP FRYING)
-Heat oil for deep frying. Add mushroom pieces one by one leaving space in-between to avoid sticking
-Fry for about 1 to 2 minutes until batter turns golden brown keeping the insides fleshy. Stir in-between to avoid burning
-Likewise, deep fry all the mushroom pieces and keep it aside
(FOR MUSHROOM STIR FRY)
-Heat a cooking pan/dish and add 1 tbsp of refined oil. Let it heat
-Add vertically shredded onions and stir, followed by garlic, green chillies, ginger. Stir on high flame for about 40 seconds
-Then add chopped green capsicum and sauté
-Now add the fried mushroom and stir followed by salt to taste, 2-3 drops of vinegar and sauté
-Add 1 tbsp of chopped coriander leaves, 6-7 chopped spring onions and toss followed by 2 tsp of black peppercorn powder and stir
-Switch off the flame and serve hot immediately
