Fries :
4-6 Russet Potatoes
3 QT (3L) Boiling water
3 tbs Salt
3 tbs white Vinegar
1-2 Qt (1-2L) Peanut Oil

Fries Seasoning:
4 tbs Sea-salt
1 tsp Garlic Powder
2 tsp Paprika Powder
2 tsp Garam Masla
1/2 Tsp Curry powder
1/2 Tsp Cayenne pepper (optional)
1/2 tsp Pepper
2 tsp Parsley

Fried Onions:
1-2 Cups Vegetable Oil
1/2 Onion

Cheese Sauce:
1 Cup (230g) Heavy Cream
1/2 Onion
1/2 tbs Whole Black Pepper
1/4 tbs Mustard seeds
1-2 Garlic Cloves
2 tbs white Wine
1-2 tbs White wine vinegar
1 Cup (200g) Sharp cheddar
1 Cup (200g) Monterey Jack

Garlic Yogurt Mayo:
1/2 cup (150g) Plain Yogurt
3 Tbs Mayo
1 Glove Garlic
2-3 branches Dill
2 Tbs Parsly
1 Tbs Olive Oil
1 tsp Sugar
Salt, Pepper season to taste
you can also add some heavy cream if you want a more liquid sauce
