Using avocado on top of sushi is definitely a show stopper, but sometimes it's hard to do correctly. In this video I'll show you how to slice and top a sushi roll with avocado AND how to plate the roll to make it look like a caterpillar.
The Caterpillar Roll is normally made with unagi and cucumber on the inside, but seeing as how unagi is extremely unsustainable I will be substituting it with tempura shrimp!
