Cracklin Cornbread
1/4 cup veg oil
1 1/2 of self-rising corn meal
1/2 cup sr flour
2 eggs
1 tbsp bacon fat
1- 1 1/2 cup Buttermilk
6 oz pork cracklings (I use Lord’s)
Preheat oven to 450° Place oil, bacon fat and a little butter in 8” cast iron and put it in the oven to get the pan scorching hot. Mix ingredients then add 1/2 the fat from the hot pan into the mix then stir in cracklings and pour into the hot pan, bake for 22-25 min.
