Ingredients:
For the Puff Pastry Crust:
1 cup water
1/2 cup (1 stick) unsalted butter
1 cup all-purpose flour
4 large eggs, room temperature
For the Cream Filling:
1 package (8 oz) cream cheese, softened
2 packages (3.4 oz each) instant vanilla pudding mix
2 ½ cups cold milk
For the Topping:
1 tub (8 oz) whipped topping (Cool Whip), thawed
Chocolate syrup (for drizzling)
Instructions:
Prep: Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch baking pan.
Make the Dough: In a medium saucepan, bring the water and butter to a rolling boil. Remove from heat and immediately stir in the flour all at once. Stir vigorously until the mixture forms a ball that pulls away from the sides of the pan.
Add Eggs: Transfer the dough to a mixing bowl. Beat in the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Bake Crust: Spread the dough evenly onto the bottom and slightly up the sides of the prepared pan. Bake for 30-35 minutes, or until the crust is puffed and golden brown.
Cool: Remove from the oven. Important: Prick the crust with a fork in a few places to release steam, then let it cool completely. (It will deflate in the center, forming a "shell" for the filling).
Make Filling: In a large bowl, beat the softened cream cheese until smooth. In a separate bowl, whisk the pudding mixes and milk until thickened. Gradually beat the pudding into the cream cheese until well combined and smooth.
Assemble: Spread the pudding mixture evenly over the cooled crust.
Top: Spread the whipped topping over the pudding layer.
Chill: Refrigerate for at least 1 hour before serving to let it set.
Serve: Cut into squares. Just before serving, drizzle generously with chocolate syrup.
