Chicken Curry Recipe – Moms Touch Style :-
Ingredients (Serves 3–4 people)
Main
Chicken – 500 g (bone-in works best, more flavor)
Oil – 2 tbsp (mustard oil for authenticity, regular oil is fine)
Onions – 3 medium, finely chopped
Tomatoes – 2 medium, finely chopped
Ginger-garlic paste – 4 tbsp
Fresh coriander leaves – for garnish
Water – as needed
Whole Spices (non-negotiable for aroma)
Bay leaf – 3
Cinnamon – 1 small stick
Green cardamom – 3
Cloves – 4
Cumin seeds – 1 tsp
Powdered Spices
Turmeric powder – 1 tsp
Red chili powder – 3 tsp (adjust to heat tolerance)
Coriander powder – 2 tsp
Garam masala – 1 tsp
Salt – to taste
Step-by-Step Cooking Process
Step
1: Heat the Base
Heat oil in a deep pan or kadai on medium flame.
Add cumin seeds, bay leaf, cardamom, cloves, and cinnamon.
Let them crackle until the kitchen smells like Sunday lunch.
Step 2: Onion Game
Add chopped onions.
Cook until golden brown, not pale, not burnt.
This decides your curry’s respect level.
Step 3: Ginger-Garlic + Chilies
Add ginger-garlic paste and green chilies.
Cook until raw smell disappears and oil separates slightly.
Step 4: Tomato Masala
Add chopped tomatoes.
Cook well until oil separates and masala thickens.
Patience here = restaurant-level gravy.
Step 5: Spice Activation
Lower the flame.
Add turmeric, red chili powder, coriander powder, and salt.
Stir quickly so spices don’t burn.
Step 6: Chicken Entry
Add chicken pieces.
Increase flame and cook for 5–7 minutes, stirring, until chicken turns white and absorbs masala.
Step 7: Simmer
Add water as needed for gravy consistency.
Cover and cook on low-medium flame for 20–25 minutes until chicken is tender.
Step 8: Final Touch
Add garam masala
Mix gently and cook uncovered for 2 minutes.
Step 9: Garnish & Serve
Turn off flame.
Garnish with fresh coriander.
